Vegan Zucchini Lasagna

Today’s recipe is vegan, gluten free and raw! I know in Oman foods like this can sound scary! But trust us, it tastes better than it sounds!

Vegan cheese:
• 2 cups cashew
• 1 cup almond
• 1/2 a lemon juice
• 1 garlic clove
• teaspoon of nutritional yeast

You can also choose to only use cashew without the almond just add the extra cashews

Other ingredients:

  • 2 YUZU’s zucchini, thinly sliced lengthwise (use a mandoline for best results)
  • cherry tomatoes / plum tomatoes / tomato sauce (choose whichever option is more suitable for you)
  • YUZU’s edible flowers for garnish
  • 1 YUZU’s ’s radish
