Ingredients
- YUZU’s Zucchini, spiralized into noodles
- Basil Pesto (using YUZU’s Basil from our basil series)
- Handful of cherry tomatoes, halved
- 1-2 tablespoons nutritional yeast (adjust to taste)
- Olive oil, for sautéing
Optional Add-ins:
- Feta cheese, crumbled
- Mushrooms, sliced
- Capsicum (bell pepper), thinly sliced
- Seafood (shrimp or scallops work well)
- Chicken, grilled and sliced

Prepare the Zucchini Noodles:
- Wash the zucchini and use a spiralizer to create zucchini noodles (zoodles). Set aside.
If you don't have a spiralizer, just cut sheets of zucchini using a mandoline and slice finely.

Sauté the Vegetables:
- In a large skillet, heat a drizzle of olive oil over medium heat. If you're adding mushrooms and capsicum, sauté them first until they start to soften.
- Add the zucchini noodles and cherry tomatoes to the skillet. Sauté for 2-3 minutes, just until the zoodles are tender but still have a bite to them.

Add the Pesto:
- Reduce the heat to low and stir in the basil pesto until the zoodles and vegetables are well-coated. If using seafood, add it now and toss until heated through.

Season & Serve:
- Sprinkle nutritional yeast over the top and give everything a good toss. If using grilled chicken, place slices on top.
- Transfer to serving plates. If desired, top with crumbled feta cheese.
- Serve immediately and enjoy!
